Called by many names, the Ayam Cemani Chicken hails from the island of Java in Indonesia, and has been dubbed the “Goth Chicken” here in the United States. And understandably so…the entirety of the bird is BLACK. Jet black. In fact, the native name “Ayam Cemani” translates to “Chicken Completely Black/Dark”. This unique characteristic comes from a variation on the EDN3 Gene and produces the gorgeous “Fibromelanosis” or “Dermal Hyperpigmentation” we love about the Cemani. Fortunately, this genetic variation has proven to only be beneficial to the Ayam Cemani and has never had any detrimental affect on their health or temperament.
“So what is the temperament of an Ayam Cemani?” you may ask. To which we’re happy to respond that our Cemani are most likely the sweetest birds you will keep in your flock. It is not uncommon for our Cemani to choose a human they love, and literally fly into your arms! We have birds in our flock that are more independent, but they are still inquisitive and friendly. Compared to our egg layer hybrids, our Cemani are still decent layers and lay about 1 to 2 beautiful ivory colored eggs a week (which make luxurious omelets, or delicious anything else you can think of!). They can be kept safe in a regular chicken coop, but they LOVE to free-range and FLY.
Our Ayam Cemani flock has been carefully curated from the very best birds in the United States. We have focused on breeding to the Indonesian Breed Standard (which is very strict), and are constantly refining our stock with selective breeding and introducing new bloodlines to improve genetic diversity. The “tongue color” of our current flock ranges from light to dark grey/charcoal, and we are constantly breeding for the coveted “black tongue” (“tongue color” is a commonly referenced indicator of a Cemani’s internal hyperpigmentation - you’ll hear about this a lot from us Cemani breeders ;o)
And unlike some farms who routinely kill their “culls”, we don’t. We simply move the occasional less-than-black birdie to our White Egg Layer program where they strengthen our “Heritage Hybrid” lines with their extraordinary genetics.
